Muffins are, in many ways, the red-headed stepchild of the bakery world.  They're one of those things that sound good in theory but the homemade variety rarely live up to their true potential as seen in coffee houses around the country.  But then I discovered "jumbo muffin tins" and the glory of making these delicious treats!  Who knew that breakfast could be both this good (tasting) and good (for you)!
